The short answer is that everyday baking with aluminum is safe, but there are a few real-world limits worth knowing — what to cook in it, what to avoid, and when to replace a pan. How Much Aluminum Actually Leaches Into Food?

The amount is small enough that it matters only in specific situations. Humans ingest roughly 10 milligrams of aluminum daily from all sources — food, water, and additives combined. Aluminum cookware contributes just 1–2 milligrams of that total, according to Health Canada’s safety review. The real concern starts when you cook acidic or salty foods — think tomato sauce, citrus, vinegar, or sauerkraut — in untreated aluminum for extended periods. Anodized vs. Untreated: What Changes?

The type of aluminum matters more than the presence of aluminum itself. Anodized aluminum undergoes an electrochemical process that creates a hardened, non-reactive oxide layer on the surface. That layer seals the metal, preventing leaching almost entirely, which is why anodized pans are widely considered non-toxic for nearly all cooking.
